About Musholm
Musholm is an aquaculture company specialized in sea farming of trout of the species oncorhynchus mykiss. Our production is vertically integrated as we cover the entire life cycle of the fish from egg and smolt to large fish reared in sea farms.
Musholm has a modern processing plant and computerized traceability system for complete tracking of all its products. Our head office is situated in the port of Reerso approx. 110 km west of Copenhagen. Our hatcheries and smolt farms are situated in Jutland and our sea farms in the Great Belt. Fresh trout from Musholm is available during the harvest season from October till beginning of January. The remaining part of the year, we primarily sell frozen trout.
At 2-3 years of age the trout is harvested and has attained sizes ranging from 1 to 5 kg with a majority between 2-3 kg and 3-4 kg. We calibrate the fish in intervals of 500g, but different sizes are available upon request. We grade the trout according to meat color on the Roche scale in 13-1 4/R, 14-15/R and 15-16/R. In addition to whole trout, Musholm offers a range of value added trout products such as fillets, steaks, and portions for reprocessing, catering and retail – for private label or Musholm brand. Musholm also produces trout roe into various products, e.g. Sujiko and Ikura for the Japanese market, – and fresh and frozen trout eggs (caviar), lightly salted, pasteurized in jars or naturel in special packings for food-service and retailers.
Farming trout
Aquaculture has a long tradition in Denmark. Today the most important farmed specie is trout (Oncorhynchus mykiss). The total production of trout is approximately 40 000 to 50 000 tons per year in fresh water and seawater in total. The eggs are taken from the parent fish in the hatchery in the period from October to April. The fry are after a few months, when their size is around 5-10 gr, transported to the smolt station with good freshwater supply and kept there for 12 to 18 months. Normally, at the beginning of spring, when the fish is naturally smoltified, the smolts are put to sea in large nets. The harvesting of the trout takes place in autumn and winter. After harvesting the trout is bled, gutted and packed fresh on ice or IQF-frozen within 5 to 10 hours.
The sea farming industry employs about 500 to 700 persons in Denmark – most of them during the harvesting season -. The sea farms are generally located in small harbours and islands, so locally the sea farming of trout is an important industry.
