About Us
We are headquartered in Miami, Florida. Our facilities include three state-of-the-art processing plants, two marinas and various receiving points. We operate modern HACCP approved facilities and are approved by USDA, USDC & FDA. In addition, we are approved to export into European Community, and also supply our U.S. Armed Forces nationwide and overseas.

We are South Florida’s largest producers and packers of Spiny Lobster, processing anywhere between 1 and 3 million pounds a year. Our products are marketed both nationwide and overseas. We are proud of our world renowned “Carlos brand” seafood products and hope you enjoy them.

Our Products:

Lobster Tail
Our lobster tails are safely wild caught in traps  out of our 2 facilities in Nicaragua and various suppliers throughout the Caribbean. Product is then selected to meet our strict quality guidelines for shipment to our Miami facility for further inspection and distribution.

Whole Raw Lobsters
Whole raw lobsters are caught fresh everyday by our fishermen in the Florida Keys,  they are then transferred to our processing facility where they are selected individually to meet our standards for quality assurance.  They are then shrink wrapped, graded and frozen  within 5 minutes at 200 ° below zero through our liquid nitrogen tunnels to ensure our strict standards for quality which has given us our reputation worldwide for over 45 years.

Whole Cooked Lobsters
Whole cooked lobsters are caught fresh everyday by our fishermen in the Florida Keys, they are then transferred to our processing plant where they are then selected individually to meet our standards for cooking.  After the cooking process, they are shrink wrapped, graded and frozen within 5 minutes at 200 ° below zero through our liquid nitrogen tunnels to ensure our strict standards for quality which has given us our reputation worldwide for over 45 years.

Shrimp
Our wild caught white and pink shrimp is caught off the atlantic ocean and transported to our HACCP certified processing facility in Nicaragua, where it is inspected for quality, graded and packaged for shrimpment to our Miami facility for further distribution.
Scientific Names:  Litopenaeus schmitti  (white shrimp),  F. brasiliensis (pink shrimp), F. subtilis (brown shrimp)

Conch
Our Conch is caught in the Atlantic ocean and transported to our HACCP certified processing facility in Nicaragua, where it is inspected , cleaned 100 %, graded and packed  for shipment to our Miami facility for further distribution.

Availability:  Conch season starts November 1st – May 31st.

Kingfish
King Fish is caught off the coast of the Florida Keys by our commercial fishing fleet where it is then offloaded at our Key West facility .  It is then transported to our plant for packaging, freezing and further distribution.

Stonecrabs
Stone crabs are harvested mainly off the coast of the Florida Keys.  Our boats bring in stone crabs on a daily basis and offload them at our facilities for cooking, grading & packing for further distribution.
Scientific Name: Menippe mercenaria or Menippe adina
Pack:  40 lb Boxes
Availability:  Seasonal  October 15- May 15
