About A/S Læsø Fiskeindustri
It is a processing and export company established in 1963 with strong values and deep roots in the local island community of Læsø.
A small group of fishermen, and others, with ties to the island shared a desire to secure a steady outlet for their fish products while at the same time, developing a strong local employment base. Since that time, Læsø Fiskeindustri has grown into one of the world’s leading exporters of the highly prized delicacy, scampi – but in spite of this phenomenal growth, its founding values remain the same: the island, the sea and the fishery.
Today A/S Læsø Fiskeindustri can boast, state of the art production facilities and a skilled, experienced work force in three Danish plants and a fully-owned subsidiary in Peterhead on Scotland’s east coast.
A/S Læsø Fiskeindustri is owned by a group of over 400 stockholders, all of whom have close ties to the company and its local community. As in the beginning, more than 50 years ago, ownership is primarily in the hands of the fishermen, employees and local Læsø islanders.
As one of the world’s leading producers of scampi, A/S Læsø Fiskeindustri’s vision is to spread knowledge and enjoyment of the wonderful seafood dished in the ocean around Læsø and Denmark.
Run by a contented, motivated staff with a foundation that is deeply anchored in the island’s history and traditions, we produce accessible, high quality food products and maintain the shortest distance from ocean to consumers in Denmark and the entire world.
On its 50th anniversary in 2013, A/S Læsø Fiskeindustri could note with satisfaction its position as Europe’s leading exporter of scampi. A position which is maintained with daily shipments to both the domestic and European markets as well as customers in the US and Australia.
The company was established in 1963 and has grown markedly as a result of steadily increasing demand. This natural evolution led, in 1998, to the establishment of a Scottish compani, and, in 2003, to the launch of a line of shrimp and surimi products in our own specially developed brine. Both our Scottish and brined products constitute an important part of our business, alongside our Danish production.
Scampi (Nephrops norvegicus) live on the ocean floor at depths between 25 and 250 meters, in the waters surrounding Læsø as well as in the North Sea. The distinctive northern European scampi (also known as Norway lobster, langoustine and Dublin bay prawn) is considered an exclusive delicacy worldwide. Unsurprisingly, it is the primary product of Læsø Fiskeindustri, processed at state of the art facilities where this exquisite delicacy is lovingly prepared and packed in a range of varieties.
LÆSØ – MARIUS
A top of the range, high quality product which is immediately sorted by hand after landing, then flash frozen and packed according to weight and size.
Both “Læsø” and “Marius” are chosen from the daily catch in the waters close to the production facilities on Læsø and in Skagen. The live catch is at peak freshness when it comes to Læsø Fiskeindustri, where rapid processing and daily shipments ensure the highest quality is maintained all the way from fishing boat to consumer.
Large, attractive scampi fished from the seas around Læsø and packed in trays containing between four or five Scampi, offering the consumer the convenience of a gourmet ready-meal.
The fresh scampi are split and cleaned by experienced staff at our Læsø-branch, after which they are placed in oven-ready packaging, together with a specially developed herb mixture and serving suggestions.
Our frozen Scottish scampi are aimed at the quality conscious retail market. The amount supplied from Scotland is large and scampi from as small as 8.5 cm in length are available.
At our Peterhead plant we have established a cost minimizing strategy, which means that we can always offer products at competitive prices.
Læsø fresh scampi is an integral part of Læsø Fiskeindustri’s product line, whose strong procurement policy combined with loyal vendors and efficient processing gives Læsø Fiskeindustri the possibility of offering large quantities of fresh, top quality scampi to Denmark and the wider European market.
The fresh scampi are fished and landed close to Læsø Fiskeindustri’s processing plants and dispatched to the end customer on the same day.
Products in brine
A/S Læsø Fiskeindustri has been producing a variety of brine products since 2003:

· Surimi (imitated crab meat)
· Warm water prawns
The products which are sold in a special brine developed on Læsø, must achieve the normal high quality levels expected of A/S Læsø Fiskeindustri’s products. This means that we have stringent demands for very high quality raw materials from our suppliers.
This high-quality cold water prawn is fished from a small area near Greenland.
We have decided to call it ”Special”.
PREMIUM / “LÆSØ-LUKSUS
Our top brine product is this delicious cold water prawn named ”Premium”.
“Premium where sold for export, but marketed “Læsø-Luksus” in Denmark.
”Surimi” or imitated crab meat is a delicious product which can be used in salads and fish dishes. Surimi is sold as chunks in brine. This product is especially popular in southern Europe.
